Homemade granola: oats, flax and cocoa

You will understand that I love to make our granola, and I like to vary the recipes.

This one is particularly tasty, and really quick to do. I realized it with my family (with my big daughter) from what I had on hand.

Ingredients for approx. 3 l. granola

  • 1 cup dried apricots cut into small pieces

  • 1 cup of dried dates cut into small pieces

  • 1 cup dried cranberries (cramberries)

  • 3/4 cup dried coconut

  • 3 cups quick cooking oatmeal

  • 1 cup ground flax

  • 1/2 cup of cocoa powder

  • 1 cup plain almond butter, not crunchy

  • 1/2 cup of coconut oil 🌴

  • 1/2 cup of maple syrup

  • 2 tablespoons vanilla

  • 2 teaspoons of cinnamon

  • 2 teaspoons of salt (I rather use the pink salt of the Himalayas)

  • Optional: add at the end of the preparation coarsely chopped dark chocolate pieces

Preparation

  1. Preheat the oven to 300 ° F (150 ° C). Line baking paper with a 15x20 inch sheet or two small ones.

  2. In a bowl with the help of a whisk mix almond butter, coconut oil, cinnamon, vanilla, salt, cocoa powder, maple syrup and mix well.

  3. Add the liquid mixture in the large bowl with the oat flakes: you should incorporate it with a wooden spoon or with your hands.

  4. Spread the granola evenly over one or two plates. Cook for 30 minutes stirring every 15 minutes. The mixture must be golden.

  5. At the end of the oven let cool a little and then incorporate the dried fruit and ground flax. You can keep them in jars or airtight containers.
