Tomatoes and capers tartare, with its pesto
A wonderful recipe of tomato tartare, a recipe to savor in good company.
This tartare brings a lot of freshness and a delicious explosion of tastes thanks to the marriage of beautiful Italian tomatoes, red onion and round capers. Capers will bring a touch of "peps".
Ingredients for 4
- 6 Italian tomatoes
- 1 handful of large capers (round capers in Quebec)
- 1/2 bunch of parsley
- 1/2 red onion
- 4 tablespoons pesto
- 1 tablespoon balsamic vinegar
- olive oil
- pink Himalayan salt and black pepper
You will find in notes a pesto recipe, but you can also buy the pesto.
Preparation
- Cut the tomatoes in small dice, after having seeded them, and let them disgorge a few minutes.
- Finely chop the onion and parsley.
- Slice round capers.
- In a bowl, mix the balsamic vinegar and the olive oil. Add salt and pepper. Add the tomatoes, onions, parsley and capers, and mix everything.
- Place a cookie cutter on a plate and spread a spoonful of pesto on the bottom. Then add the tomato tartare.
- You can add a spoon of pesto and decorate with round capers.
You can also serve it in small verrines, or in salad.

Notes for the homemade pesto:
You'll need:
- 1 bunch of fresh basil
- 1/3 cup pine nuts
- 1/4 cup of olive oil
- 80 gr of pecorino (for people allergic to lactose) or grated Parmesan cheese
- 2 cloves garlic
- the juice of 1/2 lemon
- pink salt of the Himalayas
Put all the ingredients, except the oil, in a robot, and chop them finely. Stir in the oil, stirring until the mixture is homogeneous.
