Banana bread, oats and cocoa

Ripe bananas? Want chocolate? Here is a recipe banana bread super fast to achieve, very healthy and made really soft.

You can prepare your own oatmeal (gluten free), there are no dairy products, and the sweet side is provided by the maple syrup.

I also tested the recipe by replacing eggs with flaxseed for intolerant or allergic to eggs.

Note: An egg is equal to 1 tablespoon of ground flax mixed with 2 tablespoons of water (let the mixture swell and rest between 5 and 8 minutes).

ingredients

  • 175 grams of whole oat flakes
  • 30 gr unsweetened cocoa powder
  • 3 ripe bananas
  • 115 ml of coconut oil
  • 125 ml of maple syrup
  • 3 eggs
  • 1 teaspoon of bicarbonate
  • 1/2 teaspoon of baking powder

Preparation

  1. Preheat the oven to 180°C (350°F).
  2. In your blender, mix the oatmeal until you get oatmeal.
  3. Then add the bananas, maple syrup, eggs, coconut oil, cocoa, baking powder and baking soda and mix until you get a smooth paste.
  4. Pour the dough into the cake pan previously oiled, or covered with parchment paper (parchment). Before baking, you can sprinkle with oatmeal.
  5. Let your cake cook about 40-45 minutes at 180°C (350°F).

Oats a very healthy food that lowers cholesterol and contains antioxidants. It provides a sense of satiety, helps to normalize blood sugar, and is an excellent source of fiber.

Oatmeal can be eaten in many forms. They give crispiness in your cookies, replace the flour in your cakes, or can also be used in smoothies or porridge.
