Muffins dates and nuts
As you know, I'm a fan of chocolate, and with the cold season, I like to cook chocolate treats ...
These cupcakes are furiously greedy, healthy, and ultra easy to make. They will definitely please your children and adults too.
I tested with buckwheat flour, and also using rice flour ... in both cases, the muffins were successful.
Buckwheat flour is ideal if you are looking for more nutritious snacks. Indeed, its energy value is about 300 calories per 100 gram serving. In addition, in these 100 grams, you can count 15 grams of vegetable protein.
Ingredients for 10 - 12 muffins:
1 cup (120 gr) of rice flour, buckwheat or your usual flour
1/2 cup (120 gr) vegetable butter, coconut oil or your usual butter
3/5 cup (180 gr) of date puree
2 eggs
1 cup of walnuts of your choice (pecan / pecans or Grenoble): keep some for decoration
3 tablespoons of raw and unsweetened cocoa powder
1 tablespoon yeast
1 teaspoon of vanilla
1 small handful of chocolate nuggets (or more ...)
1 tablespoon maple syrup
Preparation:
Preheat your oven at 350 ° F (180 ° C). Prepare a 12-cupcakes mold by putting the cassettes in them.
In your blender or robot, mix the nuts until you get a thick enough powder, leaving small pieces of nuts.
Crush the nuts to decorate the muffins, then put in a bowl and soak them in the maple syrup. Book.
Add the dates, eggs, vanilla, flour and yeast and mix everything in your robot.
Add the chocolate chips and mix with a spatula.
Pour the dough into the cassettes filling them at three-quarters. Decorate with nuts and cook for 15-16 minutes depending on your oven (cakes should be well baked and golden on top).
