Ingredients
170 gr of chocolate 70%
35 gr unsweetened cocoa powder and 2 tablespoons for finishing
80 ml of hot water
4 eggs (white and yellow separated)
150 gr of mashed dates
125 gr of pecan nuts (pecans) or hazelnuts
150 gr of organic coconut oil, or organic vegetable oil (or butter)
Preparation
Preheat oven to 350 ° F (180 ° C)
Grease a mold and line with parchment paper.
Melt the chocolate with the oil (or butter).
In a bowl, mix the cocoa and water until the mixture is smooth, then add the melted chocolate with the oil, the egg yolks, the mashed dates, and the nuts or hazelnuts in powder. Mix with a wooden spoon.
Beat the egg whites until they are firm, and add the chocolate mixture in the snow whites very gently.
Pour the dough into the pan and bake for 45 minutes to 1 hour until the cake is firm.
Let cool about 10 minutes, and turn out on a plate. Let cool completely, and sprinkle with cocoa powder.
Instructions for mashed dates
Weigh 150 gr (2/3 cup) of dried and pitted dates (I use Deglet Noor dates)
Boil 120 ml (1/2 cup) of water, and soak the dates in this water for about 15 minutes.
Puree dates with a blender.
