Lobster tartare

Lobster tartare

In Quebec, the lobster season is fast approaching!

To highlight this beautiful crustacean, nothing like a good fresh and spicy tartare.

Ingredients for 2 people:

  • 300 gr lobster meat
  • 1 green apple cut into small cubes
  • 1 lawyer
  • 2 very thin cut green onions
  • 1 handful of flaked and toasted almonds
  • juice of 1/2 lime
  • 2 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon grated ginger
  • 1 teaspoon of Sambal Oelek (or more according to your taste)
  • (optional) 2 tablespoons chives, chopped
  • pink salt of the Himalayas and black pepper of the mill

Preparation

  1. In a bowl mix the following ingredients: ginger, olive oil, mustard, sambal oelek, lemon, salt and pepper.
  2. Cut out the lobster meat.
  3. Add the lobster pieces, green apple, green onion and almonds to the bowl containing the ingredients above. Mix well. Rectify the seasoning as needed or to taste. Book fresh.
  4. Before serving, cut avocado into small cubes and drizzle with lemon juice.
  5. In both cookie cutters, place the avocado cubes and then the tartar and press lightly to even the surface. Unwind gently. If you wish, add a drizzle of olive oil.

You can decorate the tartare with sprigs of parsley.

A green salad will accompany this tartare, with homemade mayonnaise, if you wish.

The tartare can also be served as a starter in a pretty verrine, or as an aperitif in pretty ceramic spoons.
