Shortbread with matcha, passion-mango curd
MATCHA is a trend tea, and a must of the tea ceremony in Japan.
This powdered green tea was invented in China around the 10th century, and was consumed by Buddhist monks.
Matcha has recently become a widely used ingredient in pastries. In the kitchen, its color and flavor will bring an original touch to your creations and surprise your guests!
In this recipe, I put matcha in the shortbread and accompany a lightened curd made from passion fruit and mango. This mixture is absolutely delicious and singing.
Ingredients for about 8 big cookies:
> For shortbread dough:
150 grams of rice flour (or the one of your choice)
50 gr of almond powder
50 gr of icing sugar
90 gr of butter
1 egg
1 tablespoon matcha tea
1 pinch of salt
> For the passion-mango curd:
150 ml of mango pulp
150 ml of passion fruit pulp
the zest and juice of a lime
2 eggs
80 gr of sugar (according to your taste)
2 tablespoons cornflour
optional: white chocolate for decoration
Preparation of shortbread cookies:
Mix the flours, the matcha tea, the sugar and add the butter cut in cubes.
Sand the dough gently with your fingertips until you have a fine sanding.
Add the beaten egg until you have a smooth paste.
Spread the dough between two sheets of parchment paper, and cut the dough with the cookie cutters.
Keep cool for half an hour.
Bake at 350 ° F (180 ° C) biscuits for about 15 minutes.
Preparation of passion and mango curd
With a grater, take the lemon zest. Then squeeze the lemon juice.
In a saucepan pour the passion and mango pulp, add the juice and lemon zest
In a bowl, beat the eggs with the sugar and pour into the pan containing the passion and mango pulp. Add the cornflour. Cook over low heat without stopping until the mixture thickens.
Cut the fire, pour the curd into a bowl, let cool and cover with plastic wrap.
Garnish shortbreads with curd, and decorate with white chocolate chips. Put in the fridge for 1 hour before eating.
