Sweet potatoes stuffed with spicy chickpeas
I always have in my closet some sweet potatoes and chickpeas, rich foods and easy to prepare. The question is to find the right recipes to showcase them. This recipe of stuffed potatoes with chickpeas is both a gift for your body, it will allow you to stock up on protein, and it is also really gourmet. The sesame sauce (tahin) is also an interesting discovery.
Ingredients for 4 servings
2 sweet potatoes
1 pinch of cumin
fresh coriander
For chickpeas
1 can of 398 gr organic chickpeas, canned
1 teaspoon of cumin
1 teaspoon of turmeric
1 teaspoon of paprika
1 pinch of Espelette pepper
1 pinch of salt
1 drizzle of olive oil
Note: if you like more spicy, do not hesitate to modify the dosage proposed according to your tastes.
For the sauce
60 gr of tahin (sesame cream)
20 gr of honey
1 tablespoon of olive oil
Preparation
Preheat oven to 350 ° F (180 ° C). Clean the sweet potatoes with a brush. Cut in half and put in a baking sheet covered with baking paper. Cook for about 30 minutes. Sweet potatoes should be tender when you prick them with a fork.
Meanwhile, rinse and drain the chickpeas and pour into a bowl with all the spices and olive oil. Pour this mixture into another plate and roast for 15 minutes.
Prepare the sauce: mix the tahini and the 20 ml of water. At first the tahin hardens and seems to absorb the water, it is then necessary to continue mixing until the sauce is smooth. Then add the honey, and a tablespoon of olive oil.
Take the sweet potatoes out of the oven and gently peel the flesh off the skin. In a bowl, mix the meat with the chickpeas. Add salt and pepper. Gently stuff the sweet potato skins with the mixture previously made.
Sprinkle sweet potatoes and chickpeas with tahini sauce and bake for 10 to 15 minutes.
Enjoy hot and sprinkle with fresh coriander.
