Small salted puddings with sweet potatoes and coconut milk

This recipe is inspired by a recent reading of Madame Figaro.

As an accompaniment to a dish, or as a quick and balanced evening meal, these small flans have a very sweet, slightly sweet taste.

Ingredients for 6 ramekins

  • 1 big sweet potato (about 445 gr)

  • 200 ml of coconut milk

  • 3 eggs

  • vegetable oil

  • cayenne pepper or paprika

  • pink salt of the Himalayas and black pepper of the mill

  • optional: a few sprigs of chives

 

Preparation

  1. Preheat oven to 350 ° F (180 ° C). Bake the sweet potato for about 30 minutes until tender.

  2. When the sweet potato is cooked, remove the flesh and put it in the mixer bowl with the coconut milk, eggs, pepper, salt and pepper. Blend until a homogeneous preparation is obtained.

  3. Oil the ramekins and distribute the preparation.

  4. Cook the ramekins in a bain-marie for 30 to 35 minutes.

  5. Serve hot sprinkled with chives.
