Quinoa and zucchini frittata

In lack of time, or ideas, for a simple and balanced evening meal?

I propose a dinner tasty, health and easy to cook, kind of frittata.

Frittata is an Italian dish made from eggs and vegetables, which comes in countless variations.

I often prepare this recipe for lunch-boxes, in individual muffins, but this time I made it in a quiche dish.

Ingredients for 12 muffins

  • 6 eggs

  • 1 cup precooked quinoa

  • 1/2 cup of grated cheese of your choice (Swiss, Mozzarella, Emmental or Lactose Free)

  • 1/2 grated onion

  • 2 small zucchini shredded

  • a little trickle of olive oil

  • Salt (Himalayan rose) and black pepper from the mill

  • Rosemary, a few sprigs or you can use turmeric (for me 1 tablespoon) .Now the season, I also put small yellow tomatoes cluster, or red, cut in 4.

Preparation

  1. Preheat your oven to 350 ° F (180 ° C).

  2. In a bowl, whisk the eggs with salt and pepper.

  3. Then add turmeric or rosemary, quinoa, onion, zucchini, cheese and mix well with a wooden spoon.

  4. Place the preparation in the previously oiled muffin cups, or with silicone molds (filling 3/4), or in a pie dish.

  5. Bake, if you make muffin version the cooking time is about 15-20 min, if you use a pie dish the cooking time is about 30-35 min.

Serve warm with a salad of spinach sprouts, crushed walnuts and a homemade vinaigrette made with mustard, balsamic vinegar and walnut oil. 


Health Information

I will finish this article by presenting you two treasures for the health, which I use daily: the pink salt of the Himalayas, and turmeric.

The pink salt of the Himalayas, unrefined and without additives, is extracted from saline rocks. In addition to being a healthy alternative to fine white table salt, it has multiple benefits. It is rich in trace elements, and facilitates the regeneration of blood, while reducing the dose of sodium absorbed.

As for turmeric, it is a spice with multiple preventive and curative virtues, it reduces inflammation, improves digestion, it can finally prevent (at high dose) cancer and protect the brain from Alzheimer's disease. These properties are activated by combining it with pepper. This plant of Indian origin has been used by Ayurvedic medicine for millennia.
