Naked cake dark chocolate, whipped cream white chocolate

This delicious dessert will be perfect for your festive meal or celebrate the arrival of spring.

The white chocolate ganache accompanied by some raspberries brings a greedy and fresh touch.

Naked cake comes from an American culinary trend. These cakes are usually all white, decorated with some natural flowers, with minimal icing with whipped cream, mascarpone or butter cream. This gives a country look to the cake.

This version is gluten-free, with my recipe for chocolate cake and almonds.

Ingredients for the chocolate cake

  • 250 gr of almond powder

  • 150 gr of sweet butter (lactose free: use vegetable oil)

  • 130 gr of maple sugar for me, but you can replace it with your usual sugar.

  • 250 gr of dark chocolate 70% cocoa

  • 30 gr (2 tablespoons) unsweetened cocoa powder

  • 5 eggs

  • 1 tablespoon baking powder (yeast)

Preparation:

  1. Preheat oven to 350 ° F (180 ° C). Butter and flour the 2 mussels (18 cm).

  2. In a bain-marie, melt the chocolate and butter (if you use vegetable oil, first melt the chocolate and then add the oil).

  3. Beat the eggs and sugar until the mixture turns white and creamy. Then gently add the almond powder, cocoa powder and baking powder (yeast).

  4. Add to this mixture melted chocolate and butter (or oil).

  5. Divide the dough into 2 equal parts and pour each dough into each mold, and bake for about 25 minutes.

  6. Remove the cakes from the oven and wait about 2 minutes before unmolding, and leave to cool on a rack.

Ingredients for whipped cream with white chocolate

  • 750 ml whipping cream or liquid cream

  • 170 gr of white chocolate

  • 2 trays of raspberries

Preparation

  1. Melt the white chocolate in a bain-marie.

  2. Boil 250 gr of liquid cream and pour over the melted chocolate. Add and mix the remaining liquid cream.

  3. Book in the fridge all night, or at least 4 hours.

  4. Ride like a whipped cream.

Mounting

  1. When the cakes are cool, spread the whipped cream evenly over the top of one of the two cakes and add the raspberries.

  2. Place the second cake on top and spread some whipped cream on top again, and lightly cream the sides.

  3. With a spatula remove the excess cream to give a "naked cake" effect.


Information

The almond powder is made from ground almonds. It is an alternative to wheat flour for people on a gluten-free diet. It is low in carbohydrates and filled with nutrients. She brings to the cake a lot of mellowness.
