Tian tricolore of zucchini, tomatoes, goat cheese, turmeric rice

This summer recipe, originally from Provence, is also often made with eggplant ... You can therefore add an eggplant in addition to tomatoes and zucchini.
Ingredients for tian
4 zucchini: 2 yellow and 2 green
7 tomatoes
1 branch of 6 small tomatoes
1 log of goat cheese
olive oil
fresh thyme
pink Himalayan salt and ground black pepper
Ingredients for rice
1 cup of round rice complete
2 cloves of finely chopped garlic
1 small onion, finely chopped
1 tablespoon of coconut oil (or oil of your choice)
1 tablespoon of turmeric

Rice preparation
In a saucepan, sauté the garlic and onion with a spoon of oil (coconut or your choice) for about 3 minutes.
Add turmeric, salt, pepper, and lastly rice. Mix the rice well with the garlic and onions, and fry for 2 minutes.
Add two cups of water, and mix well. Cook over medium heat until the rice has absorbed the water. Then cover the pan and continue cooking over very low heat for about 20 minutes until the rice is cooked.
Preparation of tian
Preheat the oven to 180 ° C (380 ° F).
Wash the tomatoes and zucchini, and slice them into 0.5 cm thick slices. You can also cut 2/3 of the goat cheese into slices, and keep the rest to crumble it on the preparation.
Cover the bottom of a gratin dish with the turmeric rice.
Arrange the vegetable and cheese slices, alternating and squeezing them well.
In the center, place the small whole tomatoes. Add salt and pepper.
Sprinkle with thyme and crumbled goat cheese.
Sprinkle with a generous drizzle of olive oil.
Put in the oven for about 20-30 minutes.
