Rustic tomato tart
A rustic tart to showcase your tomatoes!
It's easy to succeed, and requires a minimum of ingredients ... Super healthy, and super good.
My version is gluten free, without butter and without eggs.
Ingredients for 4
- 500 gr of tomato mixture
- 150 gr of white rice flour
- 30 gr of buckwheat flour
- 2 tablespoons olive oil
- 1 tablespoon mustard
- 1 tablespoon of Provence herbs
- 1/2 glass of warm water (about 60 ml)
- pink Himalayan salt and black pepper
You can also use 180 grams of organic wheat flour instead of rice and buckwheat flour.
Quick tomato-basil sauce:
- Take 3 large tomatoes, peel them and seed them.
- Sprinkle with a handful of fresh basil leaves.
- In a skillet, heat a drizzle of olive oil and fry a shallot.
- Add the tomato sauce and reduce to medium heat. Book.
Preparation of the pie
- Preheat the oven to 350 ° F (180 ° C).
- Mix the flours, the herbes de Provence and add the olive oil and the water. Mix the dough well, and form a ball.
- Spread the dough finely between 2 sheets of parchment paper. Book.
- Cut the tomatoes into slices.
- Brush the dough with Dijon mustard.
- Spread the tomato sauce, and place over the slices of tomatoes. Salt and pepper, and add a drizzle of olive oil.
- Fold the edges of the dough inward on the filling.
- Bake for 30 minutes at 350 ° F (180 ° C).
Taste hot.
Information
Red tomatoes are full of vitamins A, B6, C and K as well as folic acid and potassium. They also have two powerful antioxidants from its red color: beta-carotene protecting the skin, and lycopene whose antioxidant benefits increase with cooking.
